Use it cold, straight from the fridge. If cooking fresh @rice{1%cup}: Before mise-en-place-ing other ingredients: Cook @rice{} in a #small pot{} with @-water{2%cup}: Bring to a boil, then turn off heat and let steam covered for ~{25-30%min}. = Tempeh Coat the bottom of a #large wok or skillet{} with @vegetable oil{1%tbsp} and place it over medium heat. Add the @tempeh{250%g}(diced) and cook it for about ~{8%min}, flipping the pieces once or twice, until browned. Drizzle the @&(~1)tempeh{} with @soy sauce{2%tbsp}, gently flipping the pieces so they're evenly coated. Cook the @&(~1)tempeh{} for another minute or two, until most of the liquid has dried up. Remove the @&(~1)tempeh{} from the pan and transfer to a plate. = Fried Rice Stir @soy sauce{2%tbsp}, @kecap manis{2%tbsp} and @sambal oelek{1%tsp} together in a #small bowl{}. Add @vegetable oil{2%tbsp} to the wok and raise the heat to medium-high. Give the oil a minute to heat up. Add @red bell pepper{1}(diced), @medium shallot{1}(sliced) and @medium carrot{1} to the wok. Stir-fry the vegetables for about ~{2%min}, until the @medium shallot|shallots{} are soft and the @medium carrot|carrots{} and @red bell pepper|pepper{} have brightened in color and become tender-crisp. Add @garlic{2%cloves}(minced) to the wok and sauté it very briefly, stirring constantly, until it becomes fragrant (about 30 seconds). Add the @&(=1)cooked rice{} to the wok, then pour the @&(~4)sauce mixture{} over it. Quickly combine the ingredients and stir-fry the rice for about ~{2%min}, constantly stirring and flipping it, until it becomes crispy in spots. Stir in the @&(=2)cooked tempeh{}, @frozen peas{1/2%cup}(thawed) and @spring onions{2}(sliced), then remove the wok from heat. Divide onto plates and serve with @cucumber{1/2}(sliced), @tomatoes{2}(sliced) and @lime{1}(cut into wedges).
